so when i found this recipe i was like whhhattt, s'mores in a cupcake?! how can i resist=] s'mores have been america's favorite summertime treat for nearly a century and now that summer's over, i cant deny that im going through withdrawal! that is until i found this amazzzzing recipe
warning: if you're not a hardcore chocolate fan i'd cut the chocolate in half!
makes about 30 cupcakes
ingredients:
1 1/2 sticks unsalted butter
1 3/4 c all purpose flour
2 1/4 c sugar, plus 2 T
3/4 c cocoa powder
1 1/2 t baking soda
1 1/2 t baking powder
1 c milk
2 t vanilla
1 t salt
1 c boiling water
1/2 c vegetable oil
20 graham crackers, crushed
2 large eggs
9 oz. bittersweet chocolate, chopped
directions:
preheat oven to 350 degrees F
1. sift sugar(2 c plus 2 T), flour, cocoa powder, baking powder, soda & salt in electric mixer.
2. mix eggs, milk, oil & vanilla.
3. add to flour mix and beat on medium for 30 sec. scrap sides then beat 2 min
4. add water; mix
5. mix graham cracker, 1/4 c sugar & butter
6. put 1 T into each liner & press w small glass; add 2 t of chocolate then bake for 5 min
7. then fill each liner 3/4 full & top with remaining chocolate & graham cracker; bake 18-20 min
marshmallow frosting!

2 c conf. sugar
1/2 t vanilla
